Description
A refreshing dish featuring marinated chicken, creamy avocado, and fluffy jasmine rice, perfect for family gatherings or summer barbecues.
Ingredients
Scale
- 4 boneless, skinless chicken breasts or thighs
- Juice of 2 limes (freshly squeezed)
- 3 cloves garlic (minced)
- 1/2 cup fresh cilantro (chopped)
- 1 ripe avocado (sliced)
- 1 cup jasmine rice
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- Salt and pepper to taste
Instructions
- Marinate the chicken: In a bowl, combine chicken, lime juice, minced garlic, chopped cilantro, cumin, salt, and pepper. Let it marinate for at least 30 minutes.
- Cook the rice: Prepare jasmine rice according to package instructions, rinsing it well before cooking.
- Sauté the chicken: In a skillet over medium heat, add olive oil. Once hot, add the marinated chicken and sauté until cooked through, about 6-7 minutes per side.
- Prepare the avocado: Slice the avocado and season with salt and lime juice.
- Assemble your plate: Serve a scoop of jasmine rice topped with sautéed chicken and avocado slices. Drizzle with pan juices.
- Garnish: Finish with fresh cilantro and lime wedges.
Notes
Marinating the chicken longer intensifies flavor. Be sure to let it rest after cooking for juiciness.
