Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 large egg
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips
  • 1/2 cup crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg until fully incorporated.
  4. Whisk together the flour, baking soda, and salt in another bowl. Gradually add this to the wet mixture while stirring gently.
  5. Fold in the white chocolate chips and crushed peppermint candies until evenly distributed.
  6. Scoop even portions of dough onto the prepared baking sheet, spacing them a couple of inches apart.
  7. Bake for around 10-12 minutes, or until the edges are lightly golden.
  8. Let the cookies cool on the baking sheet for about five minutes before transferring them to a wire rack to cool completely.

Notes

For the best chewy consistency, do not over-mix the dough or bake too long. The cookies should look slightly soft when pulled from the oven.
