- 1 cup unsalted butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 large egg
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup white chocolate chips
- 1/2 cup crushed peppermint candies
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg until fully incorporated.
- Whisk together the flour, baking soda, and salt in another bowl. Gradually add this to the wet mixture while stirring gently.
- Fold in the white chocolate chips and crushed peppermint candies until evenly distributed.
- Scoop even portions of dough onto the prepared baking sheet, spacing them a couple of inches apart.
- Bake for around 10-12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for about five minutes before transferring them to a wire rack to cool completely.
Notes
For the best chewy consistency, do not over-mix the dough or bake too long. The cookies should look slightly soft when pulled from the oven.
