Delightful Vegan Ube Rolls infused with the earthy sweetness of ube and topped with coconut cream, perfect for gatherings or a sweet treat.
Ingredients

- 1 cup ube (fresh or frozen)
- 4 cups all-purpose flour (or whole wheat flour)
- 1 cup coconut milk
- 1/2 cup coconut sugar (or brown sugar)
- 2 tsp instant yeast
- 1 tsp vanilla extract
- 1 tsp salt
Instructions
- If using fresh ube, peel and boil until soft, then mash. If using frozen, thaw and mash.
- In a mixing bowl, combine flour, coconut sugar, and salt.
- Dissolve yeast in warm coconut milk and let sit for 5 minutes. Add mashed ube and vanilla extract.
- Combine wet and dry ingredients, kneading until smooth.
- Cover and let rise for 1 hour, until doubled in size.
- Punch down the dough, roll into a rectangle, cut into strips, and roll into spirals.
- Place in a greased dish and let rise for another 30 minutes.
- Preheat oven to 350°F (175°C) and bake for 20-25 minutes until golden brown.
- Serve warm with coconut cream or icing.
