Description

Delightful Vegan Ube Rolls infused with the earthy sweetness of ube and topped with coconut cream, perfect for gatherings or a sweet treat.


Ingredients

  • 1 cup ube (fresh or frozen)
  • 4 cups all-purpose flour (or whole wheat flour)
  • 1 cup coconut milk
  • 1/2 cup coconut sugar (or brown sugar)
  • 2 tsp instant yeast
  • 1 tsp vanilla extract
  • 1 tsp salt

Instructions

  1. If using fresh ube, peel and boil until soft, then mash. If using frozen, thaw and mash.
  2. In a mixing bowl, combine flour, coconut sugar, and salt.
  3. Dissolve yeast in warm coconut milk and let sit for 5 minutes. Add mashed ube and vanilla extract.
  4. Combine wet and dry ingredients, kneading until smooth.
  5. Cover and let rise for 1 hour, until doubled in size.
  6. Punch down the dough, roll into a rectangle, cut into strips, and roll into spirals.
  7. Place in a greased dish and let rise for another 30 minutes.
  8. Preheat oven to 350°F (175°C) and bake for 20-25 minutes until golden brown.
  9. Serve warm with coconut cream or icing.
