Ingredients

  • 1 cup green or brown lentils
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 bell pepper, diced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced or crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • Chili flakes (optional)

Instructions

  1. Heat a tablespoon of olive oil in a large pot over medium heat.
  2. Add the diced onion, minced garlic, and a pinch of salt; sauté until the onions are translucent, about 5 minutes.
  3. Toss in chopped carrots and celery; sauté for another 5 minutes.
  4. Add lentils, vegetable broth, and canned tomatoes to the pot; stir to combine.
  5. Sprinkle in dried oregano and thyme; bring to a boil, then reduce heat to simmer uncovered for about 30-35 minutes.
  6. Stir in freshly squeezed lemon juice and adjust seasoning with salt and pepper; add chili flakes if desired.
  7. Ladle the soup into bowls, garnish with fresh herbs, and enjoy warm.
