- 1 cup green or brown lentils
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 1 can (14.5 oz) diced or crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Juice of 1 lemon
- Salt and pepper, to taste
- Chili flakes (optional)
Instructions
- Heat a tablespoon of olive oil in a large pot over medium heat.
- Add the diced onion, minced garlic, and a pinch of salt; sauté until the onions are translucent, about 5 minutes.
- Toss in chopped carrots and celery; sauté for another 5 minutes.
- Add lentils, vegetable broth, and canned tomatoes to the pot; stir to combine.
- Sprinkle in dried oregano and thyme; bring to a boil, then reduce heat to simmer uncovered for about 30-35 minutes.
- Stir in freshly squeezed lemon juice and adjust seasoning with salt and pepper; add chili flakes if desired.
- Ladle the soup into bowls, garnish with fresh herbs, and enjoy warm.
