  • ½ cup Parmesan Cheese (grated)
  • 1 cup Chicken Broth
  • Salt and Pepper to taste
  • Olive Oil (for sautéing)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the ground turkey, breadcrumbs, minced garlic, egg, chopped onion, and Parmesan in a large bowl. Season with salt, pepper, and chopped sage.
  3. Roll the mixture into meatballs, about one inch in diameter.
  4. Place the meatballs on a lined baking sheet and bake for 20-25 minutes until cooked through.
  5. Heat a skillet over medium heat, add olive oil, and sauté the onion until golden.
  6. Add the pumpkin puree and chicken broth, stirring until combined. Add more sage, salt, and pepper.
  7. Combine the cooked meatballs into the sauce and let it simmer for about 10 minutes.
  8. Serve over creamy polenta or with crusty bread.
