- 1 cup Pumpkin Puree
- 2 tbsp Fresh Sage (finely chopped)
- 1 Egg
- 1 cup Italian-seasoned Breadcrumbs
- 3 cloves Garlic (minced)
- 1 Onion (finely diced)
- ½ cup Parmesan Cheese (grated)
- 1 cup Chicken Broth
- Salt and Pepper to taste
- Olive Oil (for sautéing)
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the ground turkey, breadcrumbs, minced garlic, egg, chopped onion, and Parmesan in a large bowl. Season with salt, pepper, and chopped sage.
- Roll the mixture into meatballs, about one inch in diameter.
- Place the meatballs on a lined baking sheet and bake for 20-25 minutes until cooked through.
- Heat a skillet over medium heat, add olive oil, and sauté the onion until golden.
- Add the pumpkin puree and chicken broth, stirring until combined. Add more sage, salt, and pepper.
- Combine the cooked meatballs into the sauce and let it simmer for about 10 minutes.
- Serve over creamy polenta or with crusty bread.
Notes
For extra flavor, consider pan-frying the meatballs for a crispy finish, or add a splash of cream for a richer sauce.
