  • 2 garlic cloves, minced
  • 1 cup breadcrumbs (panko preferred)
  • 2 large eggs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup fresh parsley, chopped
  • 1 tsp fresh thyme
  • 1/4 cup pan drippings or chicken broth for gravy
  • 2 tbsp butter for gravy
  • 2 tbsp flour for gravy

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground turkey, cranberries, sautéed onions, garlic, breadcrumbs, and beaten eggs. Season with salt, pepper, parsley, and thyme.
  3. Transfer the meat mixture to a baking sheet or loaf pan, shaping it into a loaf.
  4. Bake for 60-70 minutes, or until the internal temperature reaches 165°F (74°C).
  5. For the gravy, melt butter in a saucepan, whisk in flour for 2 minutes, then gradually add pan drippings or broth until thickened.
  6. Let the meatloaf rest for 10 minutes before slicing and serve with warm gravy.
