- 1 cup fresh cranberries (or dried cranberries)
- 1 medium onion, sautéed
- 2 garlic cloves, minced
- 1 cup breadcrumbs (panko preferred)
- 2 large eggs
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup fresh parsley, chopped
- 1 tsp fresh thyme
- 1/4 cup pan drippings or chicken broth for gravy
- 2 tbsp butter for gravy
- 2 tbsp flour for gravy
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the ground turkey, cranberries, sautéed onions, garlic, breadcrumbs, and beaten eggs. Season with salt, pepper, parsley, and thyme.
- Transfer the meat mixture to a baking sheet or loaf pan, shaping it into a loaf.
- Bake for 60-70 minutes, or until the internal temperature reaches 165°F (74°C).
- For the gravy, melt butter in a saucepan, whisk in flour for 2 minutes, then gradually add pan drippings or broth until thickened.
- Let the meatloaf rest for 10 minutes before slicing and serve with warm gravy.
Notes
Do not overmix the meatloaf mixture to ensure tenderness.
