- 8 oz cream cheese, softened
- 2 tbsp espresso powder
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup cocoa powder (for dusting)
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened cream cheese and butter until light and fluffy, about 3-4 minutes.
- Gradually mix in the granulated sugar until well incorporated.
- Add in the egg and vanilla extract, mixing until combined.
- Whisk together the flour, espresso powder, cocoa powder, and salt in a separate bowl.
- Fold the dry ingredients into the wet mixture until no streaks remain.
- Optional: Fold in chocolate chips just before scooping.
- Scoop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
- Dust with cocoa powder before serving for a classic appearance!
Notes
Chill the dough for 30 minutes before baking for fluffier cookies. Dusting with cocoa adds both visual appeal and flavor.
