Ingredients

  • 2 tbsp espresso powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup cocoa powder (for dusting)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened cream cheese and butter until light and fluffy, about 3-4 minutes.
  3. Gradually mix in the granulated sugar until well incorporated.
  4. Add in the egg and vanilla extract, mixing until combined.
  5. Whisk together the flour, espresso powder, cocoa powder, and salt in a separate bowl.
  6. Fold the dry ingredients into the wet mixture until no streaks remain.
  7. Optional: Fold in chocolate chips just before scooping.
  8. Scoop spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes until edges are lightly golden.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
  11. Dust with cocoa powder before serving for a classic appearance!
