A refreshing salad that combines the sweetness of strawberries with the tartness of pomegranate seeds, enhanced by creamy feta and fresh mint.
Ingredients

- 2 cups ripe strawberries, hulled and sliced
- 1 cup pomegranate seeds
- 4 cups mixed greens or arugula
- 1/2 cup crumbled feta or goat cheese
- 1/4 cup fresh mint, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- Wash and hull the strawberries, then slice them into quarter-inch pieces and place them in a large mixing bowl.
- If using fresh pomegranates, cut them in half and gently tap the back with a wooden spoon to pop the seeds out. Add the seeds into the bowl with the strawberries.
- Tear the greens into bite-sized pieces and toss them into the fruit bowl.
- Crumble the cheese on top.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and gently toss everything together.
- Chop the fresh mint and sprinkle it on top before serving.
