Description

A refreshing salad that combines the sweetness of strawberries with the tartness of pomegranate seeds, enhanced by creamy feta and fresh mint.


Ingredients

  • 2 cups ripe strawberries, hulled and sliced
  • 1 cup pomegranate seeds
  • 4 cups mixed greens or arugula
  • 1/2 cup crumbled feta or goat cheese
  • 1/4 cup fresh mint, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Wash and hull the strawberries, then slice them into quarter-inch pieces and place them in a large mixing bowl.
  2. If using fresh pomegranates, cut them in half and gently tap the back with a wooden spoon to pop the seeds out. Add the seeds into the bowl with the strawberries.
  3. Tear the greens into bite-sized pieces and toss them into the fruit bowl.
  4. Crumble the cheese on top.
  5. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  6. Drizzle the dressing over the salad and gently toss everything together.
  7. Chop the fresh mint and sprinkle it on top before serving.
