- 1 cup fresh strawberries, chopped
- 8 oz cream cheese, softened
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1/2 cup whole milk
- 1 tsp vanilla extract
- 1/2 cup unsalted butter, softened
Instructions
- Preheat the oven to 375°F (190°C).
- Grease a muffin tin or line it with paper liners.
- In a large bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, cream together butter and sugar until fluffy.
- Add eggs one at a time and mix well, then add vanilla extract.
- Gradually add dry ingredients to the wet mixture, alternating with milk.
- Gently fold in chopped strawberries and cream cheese.
- Spoon batter into muffin cups, filling them about 2/3 full.
- Bake for 20-25 minutes until golden and a toothpick comes out clean.
- Cool for 5 minutes before transferring to a cooling rack.
Notes
For a dairy-free option, use vegan cream cheese and almond milk. To avoid dense muffins, do not overmix the batter.
