- 8 oz spicy Spanish chorizo, diced
- 2 medium Yukon Gold or red potatoes, diced
- 4 cups vegetable broth
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 2 tbsp fresh parsley, chopped
- 1 tsp fresh thyme leaves
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Sauté the chorizo: In a large pot, heat a drizzle of olive oil over medium heat. Add the chorizo and cook until brown and crispy, about 5–7 minutes.
- Add aromatic: Toss in diced onions and minced garlic, allowing them to soften for 3–4 minutes.
- Incorporate diced potatoes, stirring to coat them with the mixture. Let them cook for 2 minutes.
- Pour in vegetable broth, scraping the bottom of the pot to lift all the delicious brown bits. Bring to a boil, then reduce heat and let simmer for 15–20 minutes, until the potatoes are tender.
- Season to taste with salt, pepper, and crushed red pepper flakes as desired. Add fresh herbs right before serving.
- Serve warm in bowls and enjoy!
