  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme leaves
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Sauté the chorizo: In a large pot, heat a drizzle of olive oil over medium heat. Add the chorizo and cook until brown and crispy, about 5–7 minutes.
  2. Add aromatic: Toss in diced onions and minced garlic, allowing them to soften for 3–4 minutes.
  3. Incorporate diced potatoes, stirring to coat them with the mixture. Let them cook for 2 minutes.
  4. Pour in vegetable broth, scraping the bottom of the pot to lift all the delicious brown bits. Bring to a boil, then reduce heat and let simmer for 15–20 minutes, until the potatoes are tender.
  5. Season to taste with salt, pepper, and crushed red pepper flakes as desired. Add fresh herbs right before serving.
  6. Serve warm in bowls and enjoy!
