- 1 lemon (juice and zest)

- 1–2 tablespoons extra virgin olive oil

Instructions
- Pat the scallops dry with a paper towel. Season lightly with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add the scallops to the hot skillet without overcrowding. Cook for 2-3 minutes on each side until golden brown.
- Reduce the heat to medium-low. Add minced garlic and then the butter. Swirl to create a sauce.
- Squeeze fresh lemon juice and zest into the sauce, mixing well.
- Plate the scallops on a serving platter, drizzle with lemon butter, and garnish with fresh herbs.
