Ingredients

  • 1 lb ground meat (beef, turkey, or chicken)
  • 1 cup fresh cranberries
  • 1/2 cup breadcrumbs
  • 1 egg
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup honey or brown sugar (for glaze)
  • 1/4 cup water (for glaze)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Dice onions and garlic and sauté them in olive oil over medium heat for 2-3 minutes until translucent.
  3. Mix the ground meat, sautéed onions and garlic, breadcrumbs, egg, chopped herbs, salt, and pepper in a large bowl.
  4. Form the mixture into 1 to 1.5-inch balls.
  5. Combine cranberries, water, honey or brown sugar, and salt in a saucepan for the glaze. Cook until the cranberries burst.
  6. Place the meatballs on a lined baking sheet, brush with cranberry glaze, and bake for 20-25 minutes until golden brown.
  7. Garnish with additional glaze and herbs before serving.

Notes

Adjust cooking time based on the size of the meatballs. Ensure the internal temperature reaches 165°F (74°C) for poultry.
