- 2 cups fresh corn (cut off the cob or canned)
- 2 cups shredded sharp cheddar cheese
- 4 large eggs
- 1 cup whole milk
- 2 tablespoons unsalted butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 handful fresh herbs (thyme, chives, or parsley), finely chopped
Instructions
- Preheat your oven to 350°F (175°C).
- Melt the butter in a skillet over medium heat and sauté the onion and garlic until translucent, about 5 minutes.
- In a large bowl, whisk together the eggs, milk, corn, cheddar cheese, sautéed onion and garlic, salt, pepper, and fresh herbs.
- Pour the mixture into a greased casserole dish and bake for 40-45 minutes until the top is golden brown and the center is set.
- Allow to cool for 10 minutes before slicing and serving.
Notes
Allowing the pudding to rest after baking will help maintain its shape when slicing. Avoid overmixing to prevent a tougher texture.
