Ingredients

  • 2 cups fresh corn (cut off the cob or canned)
  • 2 cups shredded sharp cheddar cheese
  • 4 large eggs
  • 1 cup whole milk
  • 2 tablespoons unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 handful fresh herbs (thyme, chives, or parsley), finely chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a skillet over medium heat and sauté the onion and garlic until translucent, about 5 minutes.
  3. In a large bowl, whisk together the eggs, milk, corn, cheddar cheese, sautéed onion and garlic, salt, pepper, and fresh herbs.
  4. Pour the mixture into a greased casserole dish and bake for 40-45 minutes until the top is golden brown and the center is set.
  5. Allow to cool for 10 minutes before slicing and serving.

Notes

Allowing the pudding to rest after baking will help maintain its shape when slicing. Avoid overmixing to prevent a tougher texture.
