Description

A heartfelt tribute to fall with a creamy pumpkin filling, nutty oat crust, and a blend of warm spices.


Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup unsalted butter, melted
  • 1/4 cup maple syrup or brown sugar
  • 1/4 tsp salt
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 cup milk (dairy or plant-based)
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the crust: In a mixing bowl, combine oats, melted butter, sweetener, and salt. Mix until crumbly. Press into the bottom of a tart pan and bake for 10–12 minutes until golden.
  3. Make the filling: In another bowl, blend pumpkin puree, eggs, milk, sweetener, and spices until smooth.
  4. Combine the filling over the pre-baked crust evenly.
  5. Bake for 40–45 minutes until the filling is set but jiggles slightly in the center.
  6. Cool for at least an hour before slicing.

Notes

Top with whipped cream or a drizzle of maple syrup for added flavor.
