A heartfelt tribute to fall with a creamy pumpkin filling, nutty oat crust, and a blend of warm spices.
Ingredients

- 1 1/2 cups rolled oats
- 1/2 cup unsalted butter, melted
- 1/4 cup maple syrup or brown sugar
- 1/4 tsp salt
- 1 cup pumpkin puree
- 2 large eggs
- 1 cup milk (dairy or plant-based)
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the crust: In a mixing bowl, combine oats, melted butter, sweetener, and salt. Mix until crumbly. Press into the bottom of a tart pan and bake for 10–12 minutes until golden.
- Make the filling: In another bowl, blend pumpkin puree, eggs, milk, sweetener, and spices until smooth.
- Combine the filling over the pre-baked crust evenly.
- Bake for 40–45 minutes until the filling is set but jiggles slightly in the center.
- Cool for at least an hour before slicing.
Notes
Top with whipped cream or a drizzle of maple syrup for added flavor.
