Ingredients

  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 1 cup mayonnaise (or Greek yogurt)
  • 2 tbsp Dijon mustard
  • 1 cup diced celery
  • 1 cup diced bell peppers (red, yellow, green)
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • Salt and pepper to taste

Instructions

  1. Begin by washing and peeling the potatoes. Chop them into uniform cubes for even cooking.
  2. Bring a pot of salted water to a boil, then add the potatoes. Cook until fork-tender, about 15 minutes.
  3. Drain the potatoes and let them cool for a few moments.
  4. While they cool, prepare the dressing. In a large bowl, mix mayonnaise, Dijon mustard, salt, and pepper.
  5. Once the potatoes are at room temperature, add them to the bowl along with diced celery, bell peppers, and herbs. Gently fold everything together.
  6. Shape the potato salad into a conical tree on a serving platter.
  7. Decorate the tree with additional veggies like cherry tomatoes, olives, or radish slices, and add a sprig of rosemary or parsley for a topper!
  8. Chill in the refrigerator for at least an hour before serving.

Notes

You can substitute Greek yogurt for mayonnaise for a lighter version. For a dairy-free option, use avocado.
