A festive and charming potato salad shaped like a Christmas tree, perfect for holiday gatherings.

- 2 lbs Yukon Gold potatoes, peeled and cubed
- 1 cup mayonnaise (or Greek yogurt)
- 2 tbsp Dijon mustard
- 1 cup diced celery
- 1 cup diced bell peppers (red, yellow, green)
- 1/4 cup chopped fresh dill
- 1/4 cup chopped fresh chives
- Salt and pepper to taste
Instructions
- Begin by washing and peeling the potatoes. Chop them into uniform cubes for even cooking.
- Bring a pot of salted water to a boil, then add the potatoes. Cook until fork-tender, about 15 minutes.
- Drain the potatoes and let them cool for a few moments.
- While they cool, prepare the dressing. In a large bowl, mix mayonnaise, Dijon mustard, salt, and pepper.
- Once the potatoes are at room temperature, add them to the bowl along with diced celery, bell peppers, and herbs. Gently fold everything together.
- Shape the potato salad into a conical tree on a serving platter.
- Decorate the tree with additional veggies like cherry tomatoes, olives, or radish slices, and add a sprig of rosemary or parsley for a topper!
- Chill in the refrigerator for at least an hour before serving.
Notes
You can substitute Greek yogurt for mayonnaise for a lighter version. For a dairy-free option, use avocado.
