Instructions
- Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9×13-inch baking dish well with butter or cooking spray.
- Prepare the Pistachios: Pulse the shelled pistachios in a food processor until finely ground; set aside a handful for garnishing.
- Make the Crust: In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add flour, one egg, and a pinch of salt, mixing until combined. Press this mixture evenly into the bottom of the greased baking dish.
- Prepare the Filling: In another bowl, beat the cream cheese until smooth. Add powdered sugar, remaining eggs, vanilla extract, and ground pistachios, mixing until combined.
- Pour and Bake: Pour the filling over the crust. Bake for 40 to 45 minutes until the edges are golden brown and the center looks slightly wobbly.
- Cool and Serve: Allow the cake to cool in the pan for about 30 minutes before slicing. Top with reserved pistachios for garnish.
