Ingredients

  • 1 wheel or rounds of Brie cheese
  • 1 cup raw and unsalted pistachios, coarsely chopped
  • 1/2 cup fig jam
  • 1 egg (optional, for egg wash)
  • Parchment paper for baking sheet

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. If using a whole wheel, slice the Brie into rounds or wedges.
  3. Pulse the pistachios in a food processor until coarsely chopped.
  4. If using an egg wash, whisk the egg in a small bowl.
  5. Dip each Brie piece into the egg wash, letting excess drip off, then coat with chopped pistachios.
  6. Arrange on a parchment-lined baking sheet with space between each round.
  7. Bake for 15-20 minutes until cheese is gooey and crust is golden brown.
  8. In the last 5 minutes, melt the fig jam in a small saucepan over low heat.
  9. Drizzle melted fig jam over the baked Brie rounds and let them rest for a minute before serving.
