- 1 cup granulated sugar
- 3 large eggs
- 1 cup heavy cream
- 1 cup crushed pistachios
- 1 tsp vanilla extract
- 8 oz white chocolate, melted
- 1 ½ cups graham cracker crumbs
- ½ cup melted butter
Instructions
- Preheat the oven to 325°F (160°C).
- Prepare the crust by mixing graham cracker crumbs with melted butter and sugar, then press into the bottom of a springform pan.
- In a large bowl, beat cream cheese until smooth, gradually adding sugar until fluffy. Add eggs one at a time, then mix in the heavy cream, vanilla, and melted white chocolate. Fold in crushed pistachios.
- Pour the cheesecake batter into the prepared crust, smooth the top, and bake for 50-60 minutes until set but slightly jiggly in the center.
- Once baked, turn off the oven, crack the door, and let cool for an hour. Refrigerate for at least four hours or overnight.
- Serve it garnished with whole pistachios or extra melted white chocolate.
