- 4 bone-in or boneless pork chops
- 2 tablespoons freshly cracked black peppercorns
- 1 cup heavy cream
- 2 cloves garlic or 1 shallot, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- Fresh herbs (thyme or parsley) for garnish
Instructions
- Prepare the pork chops: Pat dry with paper towels, then season generously with salt and black pepper on both sides.
- Sear the pork chops: In a skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add the pork chops and sear for 4-5 minutes on each side until golden brown and cooked to 145°F. Remove and let rest.
- Make the peppercorn sauce: In the same skillet, add 1 tablespoon of butter and minced garlic or shallots. Sauté until fragrant, about 30 seconds.
- Deglaze the pan: Pour in a splash of white wine or broth, scraping up the brown bits. Let simmer for a couple of minutes.
- Add the cream: Reduce heat to low, stir in heavy cream, cracked pepper, and a pinch of salt to taste. Allow sauce to thicken for 3-5 minutes.
- Combine: Add the pork chops back into the skillet, coating them in the sauce, and spoon generously over the chops.
- Garnish & serve: Finish with fresh herbs before serving alongside favorite sides like garlic sautéed mushrooms or a simple green salad.
Notes
For substitutions, use chicken or turkey chops for a leaner option. If not a fan of black pepper, try green peppercorns.
