Ingredients

  • 1 lb chicken (breast or thighs), boneless and diced
  • 1/2 cup creamy unsweetened peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp lime juice
  • Fresh cilantro, for garnish
  • Wooden skewers, soaked in water

Instructions

  1. Marinate the chicken: Whisk together peanut butter, soy sauce, brown sugar, garlic, ginger, and lime juice. Marinate chicken in the mixture for at least 30 minutes.
  2. Soak the skewers: Soak wooden skewers in water for 30 minutes.
  3. Thread the chicken: Preheat the grill; remove chicken from marinade and thread onto skewers.
  4. Grill them up: Cook skewers on the grill for 4-5 minutes on each side.
  5. Prepare the sauce: Thin out remaining marinade with water for dipping sauce.
  6. Garnish and serve: Serve skewers with the dipping sauce and garnish with cilantro.
