Ingredients

  • 1 cup long grain or jasmine rice
  • 1 can diced tomatoes
  • 1 cup diced bell peppers (mixed colors)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup corn
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Prep the ingredients by chopping the onion, garlic, and bell peppers.
  2. Heat oil in a large skillet over medium-high heat. Season chicken with salt, pepper, cumin, and paprika, then sear for 5-7 minutes on each side until golden brown. Remove from the pan.
  3. In the same pan, sauté onion and garlic until fragrant and golden.
  4. Add diced bell peppers and rice; cook for another 2-3 minutes.
  5. Mix in diced tomatoes and chicken broth, stirring well.
  6. Nestle the chicken back into the rice mixture, bring to a gentle simmer, and cover with a tight-fitting lid.
  7. Cook for 20-25 minutes until rice absorbs the liquid and chicken is cooked through. Let sit for 5-10 minutes, then fluff rice with a fork.
  8. Garnish with fresh cilantro and serve with lime wedges.
