- 1 lb boneless, skinless chicken breasts or thighs
- 1 cup long grain or jasmine rice
- 1 can diced tomatoes
- 1 cup diced bell peppers (mixed colors)
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 1 cup corn
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp chili powder
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Prep the ingredients by chopping the onion, garlic, and bell peppers.
- Heat oil in a large skillet over medium-high heat. Season chicken with salt, pepper, cumin, and paprika, then sear for 5-7 minutes on each side until golden brown. Remove from the pan.
- In the same pan, sauté onion and garlic until fragrant and golden.
- Add diced bell peppers and rice; cook for another 2-3 minutes.
- Mix in diced tomatoes and chicken broth, stirring well.
- Nestle the chicken back into the rice mixture, bring to a gentle simmer, and cover with a tight-fitting lid.
- Cook for 20-25 minutes until rice absorbs the liquid and chicken is cooked through. Let sit for 5-10 minutes, then fluff rice with a fork.
- Garnish with fresh cilantro and serve with lime wedges.
Notes
Taste as you go and adjust seasoning. For extra kick, add jalapeños or hot sauce.
