- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 2 tbsp espresso powder or strong brewed coffee
- ½ cup unsweetened cocoa powder
- 1 tsp vanilla extract
- 1 ready-made graham cracker crust (or make your own with crushed graham crackers, melted butter, and sugar)
Instructions
- Preheat your oven to 325°F (163°C).
- If making a homemade graham cracker crust, mix crushed graham crackers with melted butter and sugar, press into a 9-inch springform pan, and bake for 10 minutes. Let cool.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add the sugar and mix until fluffy.
- Add eggs one at a time, mixing well after each addition. Blend in sour cream, espresso powder, cocoa powder, and vanilla extract until well combined.
- Pour the cheesecake mixture over the crust, smoothing the top with a spatula.
- Bake for 50-60 minutes until the edges are set but the center has a slight jiggle.
- Turn off the oven and crack the door, allowing the cheesecake to cool for an hour. Transfer to the refrigerator and chill for at least 4 hours or overnight.
- Run a knife around the edges before removing the springform pan. Slice and serve.
Notes
Use room temperature ingredients for a smoother batter. For richer flavor, consider garnishing with chocolate shavings or whipped cream.
