  • ¾ cup powdered sugar
  • ⅓ cup honey
  • 1 teaspoon vanilla extract
  • 1 ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • Pinch of salt
  • 3 large eggs
  • 1 cup finely chopped pistachios

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 8-inch round cake pans.
  3. In a large mixing bowl, blend mascarpone cheese and powdered sugar until light and creamy.
  4. Add honey and vanilla extract, continuing to mix until well combined.
  5. In another bowl, whisk together flour, baking powder, and salt.
  6. In a separate bowl, beat eggs until frothy.
  7. Gradually fold the dry ingredients into the mascarpone mixture, alternating with the beaten eggs, being careful not to overmix.
  8. Fold in finely chopped pistachios.
  9. Divide batter between pans and bake for 25-30 minutes or until a toothpick comes out clean.
  10. Allow to cool in pans for 10 minutes before transferring to a wire rack.
  11. For the frosting, whip together additional mascarpone, honey, and vanilla until smooth.
  12. Assemble the torte by spreading frosting between cake layers and on top. Garnish with more chopped pistachios.
  13. Serve with a drizzle of honey if desired.
