- 1 ½ cups mascarpone cheese
- ¾ cup powdered sugar
- ⅓ cup honey
- 1 teaspoon vanilla extract
- 1 ¾ cups all-purpose flour
- 2 teaspoons baking powder
- Pinch of salt
- 3 large eggs
- 1 cup finely chopped pistachios
Instructions
- Preheat your oven to 350°F (175°C).
- Grease and flour two 8-inch round cake pans.
- In a large mixing bowl, blend mascarpone cheese and powdered sugar until light and creamy.
- Add honey and vanilla extract, continuing to mix until well combined.
- In another bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, beat eggs until frothy.
- Gradually fold the dry ingredients into the mascarpone mixture, alternating with the beaten eggs, being careful not to overmix.
- Fold in finely chopped pistachios.
- Divide batter between pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Allow to cool in pans for 10 minutes before transferring to a wire rack.
- For the frosting, whip together additional mascarpone, honey, and vanilla until smooth.
- Assemble the torte by spreading frosting between cake layers and on top. Garnish with more chopped pistachios.
- Serve with a drizzle of honey if desired.
Notes
Use room temperature ingredients for a lighter texture. Allow cakes to cool fully before frosting to avoid melting.
