Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and slice the sweet potatoes into even cubes.
  3. Cook the bacon in a skillet over medium heat until crispy, then drain on paper towels, reserving drippings.
  4. Toss the sweet potatoes with bacon drippings, melted butter, maple syrup, salt, pepper, and herbs.
  5. Spread the sweet potatoes on a baking sheet in a single layer.
  6. Roast for 25-30 minutes, flipping halfway through, until golden brown and fork-tender.
  7. Sprinkle in crispy bacon pieces for the last few minutes and drizzle with more maple syrup before serving.
