Instructions
- Preheat the oven to 400°F (200°C).
- Peel and slice the sweet potatoes into even cubes.

- Toss the sweet potatoes with bacon drippings, melted butter, maple syrup, salt, pepper, and herbs.
- Spread the sweet potatoes on a baking sheet in a single layer.
- Roast for 25-30 minutes, flipping halfway through, until golden brown and fork-tender.
- Sprinkle in crispy bacon pieces for the last few minutes and drizzle with more maple syrup before serving.
