Delightful cake-like cookies topped with velvety buttercream frosting, reminiscent of childhood treats.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 cups powdered sugar (for frosting)
  • ½ cup unsalted butter, softened (for frosting)
  • 34 tbsp milk (for frosting)
  • Food coloring (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing in the vanilla extract.
  4. Combine flour, baking powder, and salt in a separate bowl, then gradually mix into the creamed butter.
  5. Scoop tablespoon-sized portions of dough onto the prepared baking sheets.
  6. Bake for 10-12 minutes until lightly golden.
  7. Cool on wire racks before frosting.
  8. Prepare frosting by beating softened butter, adding powdered sugar, and mixing in milk to desired consistency.

Notes

For extra flavor, consider adding nuts or pureed fruits to the dough. Ensure all ingredients are at room temperature for best results.
