  • 1 Lemon (zested and juiced)
  • 3 tablespoons Capers (rinsed)
  • 2 tablespoons Olive Oil
  • 2 teaspoons Lemon Pepper Seasoning
  • Fresh Herbs (dill or parsley)

Instructions

  1. Preheat your oven to 400°F (205°C).
  2. Prepare the salmon on a large baking sheet lined with parchment paper and drizzle with olive oil, seasoning with lemon pepper.
  3. Add lemon zest and juice evenly over the salmon.
  4. Heat a tablespoon of olive oil in a skillet over medium-high heat, and fry the capers for about 3-4 minutes until crispy.
  5. Roast the salmon in the oven for 12-15 minutes until it flakes easily.
  6. Sprinkle crispy capers over the salmon before serving with lemon wedges.
