Instructions
- Preheat your oven to 400°F (205°C).
- Prepare the salmon on a large baking sheet lined with parchment paper and drizzle with olive oil, seasoning with lemon pepper.
- Add lemon zest and juice evenly over the salmon.
- Heat a tablespoon of olive oil in a skillet over medium-high heat, and fry the capers for about 3-4 minutes until crispy.
- Roast the salmon in the oven for 12-15 minutes until it flakes easily.
- Sprinkle crispy capers over the salmon before serving with lemon wedges.
