Description

A refreshing summer dessert with creamy texture and zesty lemon flavor, perfect for warm evenings.


Ingredients

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup freshly squeezed lemon juice
  • 2 teaspoons unflavored gelatin
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon

Instructions

  1. In a small bowl, sprinkle the gelatin over a couple of tablespoons of cold water and let it sit for 5-10 minutes until spongy.
  2. In a saucepan, combine the heavy cream and sugar. Heat over low to medium heat until the sugar dissolves and the mixture is warm, but do not boil.
  3. Stir in the lemon juice and zest, and bring the mixture just to a simmer. Remove from heat.
  4. Stir in the bloomed gelatin until fully dissolved.
  5. Add the vanilla extract and mix well.
  6. Pour the mixture into individual serving cups or ramekins and cool at room temperature for about 30 minutes.
  7. Transfer to the fridge to set for at least 4 hours or overnight for best results.
  8. Serve topped with berry coulis, fresh fruit, or a sprig of mint.

Notes

For a dairy-free option, substitute heavy cream with coconut cream. Honey or maple syrup can be used instead of granulated sugar.
