Ingredients

- 2 cups heavy cream
- 1/2 cup granulated sugar
- 1/4 cup freshly squeezed lemon juice
- 2 teaspoons unflavored gelatin
- 1 teaspoon vanilla extract
- Zest of 1 lemon
Instructions
- In a small bowl, sprinkle the gelatin over a couple of tablespoons of cold water and let it sit for 5-10 minutes until spongy.
- In a saucepan, combine the heavy cream and sugar. Heat over low to medium heat until the sugar dissolves and the mixture is warm, but do not boil.
- Stir in the lemon juice and zest, and bring the mixture just to a simmer. Remove from heat.
- Stir in the bloomed gelatin until fully dissolved.
- Add the vanilla extract and mix well.
- Pour the mixture into individual serving cups or ramekins and cool at room temperature for about 30 minutes.
- Transfer to the fridge to set for at least 4 hours or overnight for best results.
- Serve topped with berry coulis, fresh fruit, or a sprig of mint.
Notes
For a dairy-free option, substitute heavy cream with coconut cream. Honey or maple syrup can be used instead of granulated sugar.
