Description

Delicious muffins filled with juicy peaches and topped with a caramel drizzle, perfect for family gatherings or cozy brunches.


Ingredients

  • 2 cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1/2 cup Brown Sugar
  • 1 tablespoon Baking Powder
  • 1/2 teaspoon Salt
  • 2 large Eggs
  • 1 cup Buttermilk
  • 1/2 cup Unsalted Butter, melted
  • 1 teaspoon Vanilla Extract
  • 2 cups Fresh Peaches, diced
  • 1/4 cup Brown Sugar (for caramel drizzle)
  • 2 tablespoons Unsalted Butter (for caramel drizzle)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a jumbo muffin tin or line with muffin liners.
  3. In a bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt until there are no clumps.
  4. In another bowl, whisk together the eggs, buttermilk, melted butter, and vanilla extract.
  5. Combine the wet and dry ingredients, stirring gently to combine without overmixing.
  6. Fold in the diced peaches carefully.
  7. Spoon the batter into muffin cups, filling them about ¾ full.
  8. To make the caramel drizzle, heat brown sugar and butter in a saucepan until bubbly; let it cool slightly.
  9. Drizzle caramel on top of each muffin before baking.
  10. Bake for 18-22 minutes until golden brown and a toothpick comes out clean.
  11. Allow to cool before serving, and drizzle any remaining caramel on top.

Notes

Store leftovers in an airtight container for up to two days or refrigerate for up to a week. Muffins can also be frozen for up to three months.
