- 2 cups All-Purpose Flour
- 1 cup Granulated Sugar
- 1/2 cup Brown Sugar
- 1 tablespoon Baking Powder
- 1/2 teaspoon Salt
- 2 large Eggs
- 1 cup Buttermilk
- 1/2 cup Unsalted Butter, melted
- 1 teaspoon Vanilla Extract
- 2 cups Fresh Peaches, diced
- 1/4 cup Brown Sugar (for caramel drizzle)
- 2 tablespoons Unsalted Butter (for caramel drizzle)
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a jumbo muffin tin or line with muffin liners.
- In a bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt until there are no clumps.
- In another bowl, whisk together the eggs, buttermilk, melted butter, and vanilla extract.
- Combine the wet and dry ingredients, stirring gently to combine without overmixing.
- Fold in the diced peaches carefully.
- Spoon the batter into muffin cups, filling them about ¾ full.
- To make the caramel drizzle, heat brown sugar and butter in a saucepan until bubbly; let it cool slightly.
- Drizzle caramel on top of each muffin before baking.
- Bake for 18-22 minutes until golden brown and a toothpick comes out clean.
- Allow to cool before serving, and drizzle any remaining caramel on top.
Notes
Store leftovers in an airtight container for up to two days or refrigerate for up to a week. Muffins can also be frozen for up to three months.
