Ingredients

- 1 chuck roast
- 2 cups beef broth
- 2 onions, sliced
- 4 cloves minced garlic
- 1 tsp smoky paprika
- 1 tsp black pepper
- 1 tsp thyme
- 1 cup barbecue sauce
- 4 sandwich buns
- 4 slices of provolone or cheddar cheese (optional)
Instructions
- Place the chuck roast in a slow cooker. Season with salt, pepper, and spices, then add garlic and onions.
- Pour in beef broth and slow cook on low for 8 hours.
- Remove the roast, shred the beef with two forks, and mix in barbecue sauce.
- Toast sandwich buns on a skillet or grill until golden brown.
- Assemble the sandwich with pulled beef and cheese, and broil for a minute until cheese melts.
- Serve with desired sides.
Notes
For variations, use brisket or pulled pork. Jackfruit is a great vegetarian substitute.
