  • 8 oz cream cheese
  • 1 cup sour cream
  • 8 oz mushrooms (fresh button or cremini)
  • 3 cloves garlic (minced)
  • 2 cups shredded cheddar cheese
  • 1/4 cup green onions (chopped)
  • Salt and pepper to taste
  • 1 tsp Italian seasoning (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the mushrooms: Heat olive oil in a skillet over medium heat; add chopped mushrooms and garlic until tender and golden.
  3. Prepare the chicken: Mix diced chicken with cream cheese, sour cream, salt, pepper, and herbs until creamy.
  4. Combine: Fold in sautéed mushrooms and half of the shredded cheese.
  5. Transfer to casserole dish: Grease a baking dish and pour in the chicken mixture, smoothing out evenly.
  6. Top with cheese: Sprinkle the remaining cheese over the top.
  7. Bake: Place the casserole in the oven for 30-35 minutes until bubbly and golden brown.
  8. Garnish and serve: Sprinkle chopped green onions on top before serving.

Notes
