- 2 lbs boneless chicken (breast or thighs)
- 8 oz cream cheese
- 1 cup sour cream
- 8 oz mushrooms (fresh button or cremini)
- 3 cloves garlic (minced)
- 2 cups shredded cheddar cheese
- 1/4 cup green onions (chopped)
- Salt and pepper to taste
- 1 tsp Italian seasoning (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Sauté the mushrooms: Heat olive oil in a skillet over medium heat; add chopped mushrooms and garlic until tender and golden.
- Prepare the chicken: Mix diced chicken with cream cheese, sour cream, salt, pepper, and herbs until creamy.
- Combine: Fold in sautéed mushrooms and half of the shredded cheese.
- Transfer to casserole dish: Grease a baking dish and pour in the chicken mixture, smoothing out evenly.
- Top with cheese: Sprinkle the remaining cheese over the top.
- Bake: Place the casserole in the oven for 30-35 minutes until bubbly and golden brown.
- Garnish and serve: Sprinkle chopped green onions on top before serving.
Notes
Can be prepared ahead of time and stored in the refrigerator. Add steamed broccoli or cauliflower for extra veggies.
