- 1 spaghetti squash
- 2 cups mushrooms (shiitake and cremini)
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup Gruyère cheese, shredded
- 1 teaspoon fresh thyme
- 1 teaspoon fresh rosemary
- Salt and pepper, to taste
- Olive oil, for drizzling
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the spaghetti squash by slicing it in half lengthwise and scooping out the seeds.
- Drizzle some olive oil inside and sprinkle with salt and pepper.
- Place it cut-side down on a baking sheet and roast for about 40-45 minutes until tender.
- Sauté the mushrooms in a skillet over medium heat with olive oil and garlic until golden brown.
- Combine heavy cream and Gruyère in a saucepan over low heat until melted.
- Add the sautéed mushrooms and herbs to the creamy mixture and mix well.
- Scrape the squash strands into a bowl and pour the creamy mixture over them, stirring to combine.
- Transfer to a baking dish, top with additional cheese, and bake for 20-25 minutes until browned and bubbly.
- Serve hot, allowing to cool for a few minutes before enjoying.
Notes
Feel free to add sautéed spinach or substitute mushrooms for other vegetables like artichokes. Experiment with different cheeses for varied flavor.
