Description
Quick and delicious tostadas made with shredded rotisserie chicken, sautéed vegetables, and fresh toppings, perfect for a busy weeknight.
Ingredients
Scale
- 1 rotisserie chicken, shredded
- 8 corn tostadas
- 1 onion, diced
- 1 bell pepper, diced
- 1 tablespoon oil
- 1 teaspoon cumin
- Salt, to taste
- Pepper, to taste
- Fresh cilantro, for garnish
- Avocado or sour cream, for topping
- Salsa, for topping
- Lime, for squeezing
Instructions
- Gather Ingredients: Start by gathering everything you’ll need—the sooner everything is out, the quicker you’ll be eating.
- Shred the Chicken: Remove the skin and shred the rotisserie chicken into bite-sized pieces.
- Sauté the Veggies: Heat a tablespoon of oil in a skillet over medium heat. Add diced onions and bell peppers. Sauté until soft and fragrant, about 3-4 minutes. Add cumin, salt, and pepper to taste.
- Combine: Stir in the shredded chicken and mix well to ensure it’s warmed through and coated in those delicious spices.
- Assemble the Tostadas: On each tostada, pile the chicken mixture high. Add toppings—sour cream, salsa, and fresh cilantro for that extra zing.
- Serve: Liven them up with a squeeze of lime before serving.
Notes
For a little extra crunch, pop the assembled tostadas back in the oven for a few minutes until they’re nice and warm!
