- 1 cup unsweetened cocoa powder
- 1 cup plain full-fat Greek yogurt
- 1 cup almond flour
- 2 large eggs
- 1/2 cup zero-calorie sweetener (erythritol or stevia)
- 1/4 cup butter or coconut oil, melted
- 1 tsp vanilla extract
- 1 tsp baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare an 8×8-inch baking pan by lining it with parchment paper or greasing it lightly.
- Mix the cocoa powder, almond flour, baking powder, and sweetener in a bowl.
- Blend the Greek yogurt, melted butter or coconut oil, eggs, and vanilla extract in another bowl until smooth.
- Combine the dry ingredients into the wet mixture and stir gently until just combined.
- Bake for 25-30 minutes or until a toothpick inserted comes out with a few moist crumbs.
- Cool for at least 10 minutes before slicing and serving.
Notes
For extra fudginess, avoid overbaking and consider a sprinkle of sea salt before baking.
