Ingredients

  • 4 cups mixed greens (arugula and spinach blend)
  • 1 cup feta cheese, crumbled
  • 1/2 cup walnuts or pecans (or sunflower seeds for nut-free)
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Instructions

  1. Wash and dry the mixed greens. Core and slice the Honeycrisp apples into thin wedges, leaving the skin on.
  2. In a small bowl, whisk together olive oil, honey, and lemon juice. Season with salt and pepper.
  3. In a large bowl, combine the mixed greens, sliced apples, and crumbled feta.
