Instructions
- Prepare the Base: Begin by whisking the sugar, cocoa powder, and salt together in a saucepan. Gradually add in the milk and cream, stirring until well-combined.
- Heat the Mixture: Place the saucepan over medium heat, stirring frequently, until the mixture is warm but not boiling.
- Temper the Eggs: In a bowl, beat the egg yolks. Slowly, pour in a bit of the warm mixture into the egg yolks while whisking continuously.
- Combine: Once combined, pour the egg yolk mixture back into the saucepan. Continue to cook over medium heat, stirring constantly until the mixture thickens.
- Chill the Mixture: Remove from heat, stir in vanilla extract, let it cool to room temperature, then refrigerate for at least 2 hours.
- Churn: Place the chilled mixture into your ice cream maker and churn according to manufacturer’s instructions.
- Freeze: Transfer to an airtight container and freeze for at least 4 hours until firm.
