Description
Delicious homemade blueberry cake donuts that are sweet, fluffy, and bursting with juicy blueberries, perfect for brunch or an afternoon treat.
Ingredients
Scale
- 2 cups all-purpose flour (or gluten-free flour)
- 1 cup granulated sugar (or brown sugar)
- 2 tsp baking powder
- 2 large eggs
- 1 cup buttermilk (or regular milk with vinegar)
- 1/2 cup melted butter
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1 cup fresh blueberries (or frozen blueberries)
- Powdered sugar for glaze (optional)
- Milk for glaze (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease your donut pan.
- In a bowl, combine the dry ingredients: flour, sugar, baking powder, and cinnamon, and whisk until well blended.
- In another bowl, mix the wet ingredients: eggs, buttermilk, melted butter, and vanilla extract. Stir until completely combined.
- Gently fold the wet ingredients into the dry ingredients.
- Carefully fold in the blueberries.
- Pipe the batter into the prepared donut pan, filling each cavity halfway.
- Bake in your preheated oven for 12-15 minutes, or until they spring back when pressed.
- Allow to cool for a few minutes before transferring to a wire rack.
- For the glaze, mix powdered sugar with a splash of milk and vanilla, then drizzle over cooled donuts if desired.
Notes
Avoid overmixing batter to keep donuts tender. Use smaller blueberries or cut larger ones to prevent sinking in the batter.
