  • Fresh lemon juice, for finishing

Instructions

  1. Sauté the aromatics: In a large pot, heat olive oil over medium heat. Add diced onions and minced garlic, sautéing until translucent and fragrant—about 3-4 minutes.
  2. Add the sausage: Crumble or slice the sausage into the pot. Cook until browned—roughly 5-7 minutes.
  3. Incorporate sweet potatoes: Add the diced sweet potatoes and stir, letting it cook for another 5 minutes.
  4. Pour in the broth: Add broth, thyme, and red pepper flakes. Bring to a boil, then reduce to a simmer for 15-20 minutes, until sweet potatoes are tender.
  5. Add kale: Stir in chopped kale and let it wilt for another 5 minutes.
  6. Taste and adjust: Before serving, taste and add salt, pepper, and lemon juice as needed.
  7. Serve with love: Ladle into bowls, possibly with a side of crusty bread.
