- 2 lbs beef chuck roast, cut into bite-sized pieces
- 2 medium yellow onions, chopped
- 4 cloves fresh garlic, minced
- 3 cups beef broth
- 2 tablespoons cornstarch or flour
- 1 teaspoon dried thyme or rosemary
- Salt and pepper to taste
- 2 tablespoons Worcestershire sauce
Instructions
- Prepare the beef by trimming excess fat and cutting into evenly-sized chunks.
- Sear the beef tips in batches in a skillet until browned on all sides.
- Sauté the chopped onions in the same skillet until soft, then add minced garlic.
- Combine the browned beef and sautéed onions and garlic in the slow cooker.
- Pour in the beef broth and add herbs and seasonings, then stir to combine.
- Set the slow cooker to low for 6-8 hours or high for 3-4 hours.
- Thicken the gravy by mixing cornstarch with water and adding it to the mixture about 30 minutes before serving.
- Serve the beef tips over your choice of side and enjoy!
