Ingredients

  • 1 cup whole rolled oats
  • 3/4 cup almond or oat milk
  • 1 large egg
  • 1 medium apple (peeled and grated)
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • A pinch of salt
  • Coconut oil or butter for greasing
  • Maple syrup (optional)

Instructions

  1. Combine oats, milk, egg, and grated apple in a large bowl; stir gently until combined.
  2. Whisk together baking powder, cinnamon, and salt in a separate bowl.
  3. Add dry ingredients to the oat mixture and stir until just combined; do not over mix.
  4. Preheat a non-stick skillet over medium heat and lightly grease it.
  5. Scoop about 1/4 cup of batter onto the skillet and cook until bubbles form, then flip and cook for 2-3 minutes until golden brown.
  6. Remove pancakes and keep warm in the oven while cooking remaining batter.
  7. Serve warm with maple syrup, Greek yogurt, or fresh fruit.
