Ingredients

Instructions
- Sauté the garlic and ginger in olive oil over medium heat for about 2-3 minutes until golden and fragrant.
- Pour in the vegetable or chicken broth and stir to combine. Let the broth simmer gently.
- Toss in your favorite vegetables and let them soften for about 5-7 minutes.
- Prepare the rice noodles according to the package instructions until al dente.
- Add the cooked rice noodles to the soup, along with fresh herbs and a squeeze of citrus. Adjust seasoning as desired.
- Serve hot in bowls, garnished with additional herbs or sliced green onions.
