- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup sour cream
- 1 tsp vanilla extract
- 1–2 drops green food coloring
- 1 cup graham crackers, crushed
- 1/4 cup butter, melted
- Red crushed peppermint or cranberries for garnish
Instructions
- Preheat your oven to 325°F (160°C).
- Prepare the crust by crushing your graham crackers and mixing with melted butter. Press into mini muffin tins or silicone molds and bake for 5-7 minutes until golden. Let cool.
- Make the filling by beating the cream cheese and sugar until smooth. Add sour cream, vanilla, and green food coloring until the mixture is vibrant.
- Fill the crusts with the cheesecake mixture.
- Bake for 15-20 minutes until set but slightly jiggly in the center. They will firm up as they cool.
- Cool completely before chilling in the fridge for a few hours.
- Garnish with crushed peppermint or cranberries before serving.
