Description

A vibrant dish featuring grilled halloumi cheese paired with roasted seasonal vegetables and a zesty lemon dressing.


Ingredients

  • 8 oz Halloumi cheese
  • 2 medium Zucchini, sliced
  • 2 Bell peppers, sliced
  • 1 cup Cherry tomatoes
  • 2 tbsp Olive oil
  • 1 tbsp Fresh lemon juice
  • Salt and pepper to taste
  • Fresh herbs (Basil or parsley) for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. Prep the vegetables by washing and slicing them into even pieces.
  3. Drizzle the veggies with olive oil, salt, and pepper, and toss to coat.
  4. Cut the halloumi into thick slices, about half an inch thick.
  5. Place the vegetables onto the grill and roast for 6-8 minutes, turning occasionally.
  6. Add the halloumi to the grill for 3-4 minutes on each side until golden brown.
  7. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl for the dressing.
  8. Arrange the grilled halloumi and veggies on a platter, drizzle with dressing, and garnish with fresh herbs.

Notes

For added flavor, consider using lemon zest in the dressing. This dish can also be served as a hearty main course or a colorful side dish.
