- 8 oz Halloumi cheese
- 2 medium Zucchini, sliced
- 2 Bell peppers, sliced
- 1 cup Cherry tomatoes
- 2 tbsp Olive oil
- 1 tbsp Fresh lemon juice
- Salt and pepper to taste
- Fresh herbs (Basil or parsley) for garnish
Instructions
- Preheat the grill to medium-high heat.
- Prep the vegetables by washing and slicing them into even pieces.
- Drizzle the veggies with olive oil, salt, and pepper, and toss to coat.
- Cut the halloumi into thick slices, about half an inch thick.
- Place the vegetables onto the grill and roast for 6-8 minutes, turning occasionally.
- Add the halloumi to the grill for 3-4 minutes on each side until golden brown.
- Whisk together olive oil, lemon juice, salt, and pepper in a small bowl for the dressing.
- Arrange the grilled halloumi and veggies on a platter, drizzle with dressing, and garnish with fresh herbs.
Notes
For added flavor, consider using lemon zest in the dressing. This dish can also be served as a hearty main course or a colorful side dish.
