- 2 boneless chicken breasts or thighs
- 1 cup quinoa
- 2 ripe avocados
- 2 cloves garlic, minced
- 1/4 cup fresh cilantro or herbs of choice
- 2 tbsp lime juice
- 2 tbsp olive oil
- Salt to taste
- Water or broth for cooking quinoa
Instructions
- Marinate the chicken: Combine olive oil, minced garlic, lime juice, and fresh herbs in a bowl. Add chicken and marinate for at least 30 minutes.
- Cook the quinoa: Rinse quinoa under cold water, cook according to package instructions with a 2:1 liquid-to-quinoa ratio, approx. 15 minutes.
- Grill the chicken: Preheat grill to medium-high. Grill chicken for 6-8 minutes per side until internal temperature reaches 165°F (75°C). Let it rest and slice.
- Prepare the creamy avocado sauce: Blend avocados, lime juice, garlic, salt, and herbs in a blender with a splash of water until creamy.
- Assemble bowls: Start with quinoa in a bowl, top with grilled chicken slices, and drizzle generously with avocado sauce. Add desired toppings.
Notes
For added flavor, consider serving with grilled vegetables or a green salad. Lemon can replace lime if necessary.
