Ingredients

  • 1 batch pizza dough (store-bought or homemade)
  • 2 tablespoons olive oil
  • 1 head of garlic
  • 2 cups fresh spinach (baby spinach recommended)
  • 1 cup ricotta cheese
  • 1/2 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1 teaspoon fresh oregano
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with olive oil, wrap it in foil, and roast for 30-35 minutes until soft.
  2. In a skillet, heat olive oil and sauté the spinach until wilted.
  3. Roll out your pizza dough on a floured surface to your preferred thickness.
  4. Brush a thin layer of olive oil onto the dough. Spread a generous amount of ricotta cheese, followed by the roasted garlic, squeezing the soft cloves onto the surface.
  5. Add the sautéed spinach and sprinkle mozzarella and feta cheese over the top.
  6. Season with oregano, salt, and pepper. Bake for 15-20 minutes until the crust is golden brown and cheese is bubbly.
  7. Let cool for a few minutes, slice, and enjoy! Drizzle with olive oil and a squeeze of lemon juice for extra zest.

Notes
