- 1 batch pizza dough (store-bought or homemade)
- 2 tablespoons olive oil
- 1 head of garlic
- 2 cups fresh spinach (baby spinach recommended)
- 1 cup ricotta cheese
- 1/2 cup feta cheese, crumbled
- 1 cup mozzarella cheese, shredded
- 1 teaspoon fresh oregano
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with olive oil, wrap it in foil, and roast for 30-35 minutes until soft.
- In a skillet, heat olive oil and sauté the spinach until wilted.
- Roll out your pizza dough on a floured surface to your preferred thickness.
- Brush a thin layer of olive oil onto the dough. Spread a generous amount of ricotta cheese, followed by the roasted garlic, squeezing the soft cloves onto the surface.
- Add the sautéed spinach and sprinkle mozzarella and feta cheese over the top.
- Season with oregano, salt, and pepper. Bake for 15-20 minutes until the crust is golden brown and cheese is bubbly.
- Let cool for a few minutes, slice, and enjoy! Drizzle with olive oil and a squeeze of lemon juice for extra zest.
Notes
Don’t rush the roasting of the garlic for maximum flavor. Ensure your oven is hot enough to create a crispy crust.
