- 4 cups corn (fresh, frozen, or canned)
- 1/2 cup butter, melted
- 1/3 cup honey
- 1/2 cup heavy cream or sour cream
- 2 large eggs
- 1 teaspoon fresh or dried thyme or rosemary
- 1 cup sharp cheddar cheese (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a baking dish with butter.
- Combine the corn with melted butter in a large bowl. Stir in the honey until well coated.
- Whisk together the heavy cream, eggs, and herbs in another bowl. Pour this into the corn mixture and stir until combined.
- Add in the shredded cheddar cheese if desired.
- Transfer the mixture to the prepared baking dish and smooth it out.
- Bake for 30-35 minutes until the top is lightly golden and the center is set.
- Allow to rest for 10 minutes before serving for easier slicing.
