- 8 oz fettuccine pasta
- 2 large yellow onions, thinly sliced
- 1–2 cups shredded Gruyère cheese
- 2 cloves garlic, minced
- 3–4 cups beef or vegetable broth
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tsp fresh thyme or rosemary
(or dried) - Salt and pepper to taste
- Optional: Splash of red wine
- Optional: Crusty bread for serving
Instructions
- Sauté the onions in a large skillet over medium heat with olive oil and butter for about 30 minutes until caramelized.
- Add minced garlic and sauté for one minute. Pour in broth and wine; simmer for 10 minutes.
- Cook fettuccine pasta in salted water until al dente, reserving some pasta water before draining.
- Combine the drained pasta with the onion and broth mixture, tossing to coat.
- Incorporate shredded Gruyère, stirring until melted and creamy.
- Serve hot, garnished with additional cheese and fresh herbs, with crusty bread on the side if desired.
Notes
Feel free to substitute Gruyère with Emmental or use a blend of mozzarella and parmesan for a milder taste.
