  • 2 large yellow onions, thinly sliced
  • 12 cups shredded Gruyère cheese
  • 2 cloves garlic, minced
  • 34 cups beef or vegetable broth
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp fresh thyme or rosemary
    (or dried)
  • Salt and pepper to taste
  • Optional: Splash of red wine
  • Optional: Crusty bread for serving

Instructions

  1. Sauté the onions in a large skillet over medium heat with olive oil and butter for about 30 minutes until caramelized.
  2. Add minced garlic and sauté for one minute. Pour in broth and wine; simmer for 10 minutes.
  3. Cook fettuccine pasta in salted water until al dente, reserving some pasta water before draining.
  4. Combine the drained pasta with the onion and broth mixture, tossing to coat.
  5. Incorporate shredded Gruyère, stirring until melted and creamy.
  6. Serve hot, garnished with additional cheese and fresh herbs, with crusty bread on the side if desired.

Notes

Feel free to substitute Gruyère with Emmental or use a blend of mozzarella and parmesan for a milder taste.
