  • 2 bay leaves
  • 1 cup Gruyère cheese, shredded
  • 1 cup crusty French baguette, sliced
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Sauté the onions by melting butter in a large Dutch oven over medium heat. Add onions and a pinch of salt, cooking until caramelized, about 25-30 minutes.
  2. Remove the onions and set aside. In the same pot, brown the beef pieces in batches, adding more butter if necessary.
  3. Add garlic after the beef is browned and sauté for a minute until fragrant.
  4. Deglaze the pot with wine or broth, scraping the flavorful bits from the bottom.
  5. Combine the caramelized onions, broth, thyme, and bay leaves. Bring to a simmer and cover, cooking for at least two hours.
  6. Prepare the topping by layering cheese on the sliced bread and placing it under the broiler until bubbly.
  7. Serve hot, topped with cheesy bread and garnish with parsley.

Notes
