- 2 lbs beef chuck roast, cut into bite-sized pieces
- 4 large onions, thinly sliced
- 4 cloves fresh garlic, minced
- 4 cups beef broth
- 2 sprigs fresh thyme
- 2 bay leaves
- 1 cup Gruyère cheese, shredded
- 1 cup crusty French baguette, sliced
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Sauté the onions by melting butter in a large Dutch oven over medium heat. Add onions and a pinch of salt, cooking until caramelized, about 25-30 minutes.
- Remove the onions and set aside. In the same pot, brown the beef pieces in batches, adding more butter if necessary.
- Add garlic after the beef is browned and sauté for a minute until fragrant.
- Deglaze the pot with wine or broth, scraping the flavorful bits from the bottom.
- Combine the caramelized onions, broth, thyme, and bay leaves. Bring to a simmer and cover, cooking for at least two hours.
- Prepare the topping by layering cheese on the sliced bread and placing it under the broiler until bubbly.
- Serve hot, topped with cheesy bread and garnish with parsley.
Notes
For a vegetarian variation, consider using mushrooms instead of beef. Ensure to let the stew cool before storing leftovers.
