Ingredients

  • 1 lb fresh salmon fillets, skin-on
  • 2 medium Yukon Gold or red potatoes, diced
  • 2 large carrots, sliced
  • 1 medium yellow onion, diced
  • 2 tbsp butter
  • 1 cup heavy cream (or half-and-half)
  • 4 cups fish broth
  • 1/4 cup fresh dill, chopped

Instructions

  1. Melt the butter in a large pot over medium heat. Add the diced onion and sauté until translucent, about 3-5 minutes.
  2. Add the diced potatoes and sliced carrots, stirring gently for about 5 minutes.
  3. Pour in the fish broth and bring to a gentle boil. Reduce heat and let it simmer for about 15 minutes until the potatoes are tender.
  4. Incorporate the cubed salmon and cream, simmer gently for about 10 minutes until the salmon is cooked through.
  5. Stir in the freshly chopped dill just before serving.
