Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the crust by blending graham cracker crumbs, melted butter, and a pinch of sugar until it resembles wet sand. Press firmly into a 9-inch springform pan.
  3. Bake the crust for about 10 minutes until golden. Let it cool.
  4. Make the filling by beating the cream cheese until smooth. Gradually add granulated sugar, mixing well after each addition. Add the eggs, one at a time, blending just until incorporated. Fold in heavy cream, cinnamon, and nutmeg.
  5. Pour the filling over the cooled crust and smooth it out with a spatula.

  7. Cool the cheesecake in the oven with the door cracked for an hour.
  8. Prepare the churro topping by mixing brown sugar, flour, and cinnamon. Drizzle in melted butter and toss until evenly coated.
  9. Sprinkle the churro topping over the cheesecake and bake for an additional 10-15 minutes until golden.
  10. Cool completely at room temperature, then refrigerate for at least 4 hours before serving.
