- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup cream cheese, full-fat
- ¾ cup granulated sugar
- 3 large eggs
- 1 cup heavy cream
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¾ cup brown sugar
- ¼ cup all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the crust by blending graham cracker crumbs, melted butter, and a pinch of sugar until it resembles wet sand. Press firmly into a 9-inch springform pan.
- Bake the crust for about 10 minutes until golden. Let it cool.
- Make the filling by beating the cream cheese until smooth. Gradually add granulated sugar, mixing well after each addition. Add the eggs, one at a time, blending just until incorporated. Fold in heavy cream, cinnamon, and nutmeg.
- Pour the filling over the cooled crust and smooth it out with a spatula.
- Bake for 50-60 minutes until the center is slightly jiggly.
- Cool the cheesecake in the oven with the door cracked for an hour.
- Prepare the churro topping by mixing brown sugar, flour, and cinnamon. Drizzle in melted butter and toss until evenly coated.
- Sprinkle the churro topping over the cheesecake and bake for an additional 10-15 minutes until golden.
- Cool completely at room temperature, then refrigerate for at least 4 hours before serving.
Notes
For a lighter version, consider using low-fat cream cheese. Serve with fresh fruit or whipped cream for a delicious pairing.
