- 2 lbs boneless chicken (breast or thighs)
- 1 cup Greek yogurt
- 1 cucumber, finely grated
- 2 cloves garlic, minced
- 1 lemon, juiced
- 2 tablespoons dill, chopped
- 2 tablespoons parsley, chopped
- Salt and pepper to taste
- 1 cup mozzarella cheese, shredded
- 1 cup breadcrumbs (panko recommended)
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the chicken by placing it in a single layer in a greased baking dish.
- Mix the tzatziki by combining Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, parsley, salt, and pepper in a bowl.
- Combine the tzatziki mixture with the chicken, then sprinkle mozzarella cheese on top.
- Top with breadcrumbs and drizzle olive oil for crunch.
- Bake in the oven for 30-35 minutes, until the chicken is cooked and the casserole is bubbling.
- Rest the dish for a few minutes before serving to allow flavors to meld.
Notes
This dish can also be made with shrimp or tofu for a vegetarian option. Feel free to add your favorite vegetables.
